Bahama Breeze has put their recipes on line-and here is the to die for pina colada pudding. Course it's american measures-but I'm sure we could figure it out. Maybe our american friends can give us some idea on the size of cups!


Pina Colada Bread Pudding

Ingredients
Butter ¼ Cup
Cuban Bread Cubes 3 Quarts
Eggs 2 ½ Cups
Sugar 1 ¼ Cups
Milk 5 Cups
Vanilla Extract 1 Tbsp
Coconut Rum ½ Cup
Shredded Coconut ½ Cup
Canned Pineapple, diced ½ Cup

Procedure
Toss 3 Tbsp of melted butter with the Cuban Bread Cubes, place on a sheet pan and place in an oven at 350ºF and toast until golden. Brush a medium sized casserole dish with one Tbsp of melted butter and add the toasted bread cubes. Mix all the remaining ingredients together and pour over the bread cubes. Press down on the bread cubes until they absorb most of the liquid. Bake in a 300ºF oven for 1 hour or until firm in the center. Serve warm and enjoy!

Hi OB,
Hope you are well and the "training" is going according to plan.
Thanks for the info on Bahama Breeze. We always make a point of having at least one meal there when we are in Florida.

Is the lady that runs Bahama Breeze retaurant from the UK I can remember the program about them when they were applying for the job to move out there.

Sounds wonderful Alison. Been to the Bahama Breeze near the Vineland Mall last year. Certainly do nice food and amazing cocktails!! [msntongue]

I never liked bread and butter pudding, I remember at at school we had to make it and all I remember was using stale bread and currants...yuk! The Pina Colada one sounds a little more interesting though:D
