Kennedy you can just turn up, not sure about Medieval Times though, should be OK unless it's a really busy time, if your looking for a good meal you won't find it there!, seriously most of the dinner shows are more show than dinner, food ranges from average to dire, the only exception I know of is Dolly Partons Dixie Stampede which seems to get good reviews.

At the door, Kennedy Space Center admission is as follows:
Maximum Access: Adult $35/ Children $25
Standard Admission: Adult $29/ Children $19
Astronaut Hall of Fame Only: Adult $16/ Children $12
You should be able to find coupons for a couple dollars off of admission - they are available everywhere in the tourist booklets.

Really makes you feel proud of the Astronauts and what they did.
Fantastic place.
The tour they do is superb.
Take your camera and plenty of film or memory cards!
